Sauces and Marinades
A sauce is a liquid, cream, or semi-solid food, served on or used in preparing other foods when cooking. Most sauces are not normally consumed by themselves; they add flavour, moisture and visual appeal to a dish. Sauce is a French word taken from the Latin salsa, meaning salted.
Marination is the process of soaking foods in a seasoned, often acidic, liquid before cooking. The word's origin alludes to the use of brine in the pickling process, which led to the technique of adding flavour by immersion in liquid.
